Email aliases allow you to create a different email address for each website or service you use. This helps to avoid spam, email phishing and data breaches.
Here are two good email alias services:
SimpleLogin
The SimpleLogin service has an open-source client and server.
It also allows you to encrypt the forwarded emails with your own PGP key if you like. Can be self-hosted. Source code on GitHub.
AnonAndy
AnonAndy is another open-source service with servers in Amsterdam. The server uses UpCloud, a Finland cloud provider.
The server is currently located in UpCloud’s data centers in France and the Netherlands. Can be self-hosted. Source code on GitHub.
